So i decided to change my 4300K stock light bulbs on my 07 GT. The dealership did it for me charging 140...
I put in 6000K bulbs... Before when i had the 4300Ks in... the light patter/beam cut of line at the top was straight.. like a clean cut... after mazda installed the new bulbs my cut off line isnt straight... its somewhat un-even...
Is there any way to fix this and make it straight again? Can a installer help me make my cut off line straight again???

Wow, $140 to install two light bulbs!
The cut-off shouldn't be affected by changing bulbs.
You might have this problem since our cars come with Sylvania bulbs:

There are a bunch of bolts/screws that you move to adjust the focus point, vertical and horizontal level of the beam.
Sounds like your experiment with the new bulbs was full of $$$$

Did you put in 6000k Philips bulbs? Philips are the only OEM manufacturer that make that 6000k bulbs. GE makes some but I haven't heard good things about then. The most likey reason that your cutoff is effected is that most aftermarket bulbs (asian most likely) are not made to OEM specs and so the focal point of the bulb will be off. Basically, the asian bulbs are made by the lowest bidder and usually suffer in the quality department. Use Philips or Osram bulbs and you'll be fine. If you did use Philips Ultinion bulbs and your cutoff is out, take it back to the dealer and make them fix it.

Is that including the cost of the bulbs?
would the adjustment be different for OEM halogens as compared to HIDs?
I installed my HIDs and have noticed the aim seems to be a bit too low, the light doesn't seem to be reaching far enough really.. and shining a bit too much to the outsides

I notice the same thing. I have the 8K colour, and it shines it light to close to the car. I want it aiming higher, just below a High beam angle and shooting straight.
