Does anybody know of any good shops that essentially you take your car in, and they will just clean the heck of the interior of the car to pretty much get it looking brand new? :/ I mean everything, plastics, carpet, seats etc. How much does that sort of service go for or is it just worth getting some products and doing it myself.

it can get faily expensive if you get a total package, carpets and seats shampooed etc.
I personnaly like to do that shit myself. I do keep my car very very very very clean all the time though (im anal that way). But I hate to pay someone to do somthing I can do.
But now then if you have stains, and smoke in your car then maybe have it done.
Outside is a different storey. The shops can do much more then you can as they have all the $$$ invested in the tools to do a good job.

The guy learned as part of the Tidy Car chain but went his own way when Zeibart bought them. He's really nice and thorough - he even repainted part of my wiper arms (on the Civic before selling it) that had chipped. Prices are decent too.

How much is it normally? I know in my area, I can get a basic wash and clean for $17 I think so I wonder how much a good job would be

Proper professional interior detail typically costs around $100 (give or take).
