Had the Eibach prokit installed about 3 or 4 weeks ago, about 2 weeks after, there is this grinding noise (like how your door sounds when it needs to be WD40'd) when I am turning the steering wheel both to the left and right side. This happens more when the car is not moving, but does happen occasionally when moving. Not sure why that is.

Any ideas? Fix?

For one, try keeping the 'turning of the wheels when not moving' to a minimum, ...not a good practice! ...Second, check your power steering fluid level and belt...and finally take it back to wherever you had the springs installed and have them re-check the install, including torque specs.
