Does it matter if you switch dealerships for maintenance? Do they keep everything on a master database? Or do the dealers not share their data?

It doesn't matter if you switch dealerships for maintenance. However, I don't think there's a master database that all dealers have access to in terms of maintenance. So I'm not sure how to answer your 2nd and 3rd questions.

I bought my car at MoT, but I service my car at Oakville Mazda because it's closer to home for me.

My car was leased at Erin Mills Mazda in 2006 and serviced at Oakville, Gyro, and MOT. Gyro and MOT had access to the previous maintenance records for the car, never had a problem with any other dealerships.

I had a 2000 Protege that was bought at Downtown Mazda and serviced at Gunther Mazda in Fort Lauderdale for three years, no problem with records or warranty work there either.

Bought mine at Kieswetter in Kitchener and will be switching to Guelph shortly... was told there would be no issue warranty-wise.
