So, ive always installed my own stereos in my cars... but I'm hesitant to even try on my latest acquisition. Is there any dependable wiring harnesses on the market for these cars? Also, what function does the dashboard display serve once there is an aftermarket stereo installed? (Besides the outside temperature reading.) am i going to have to deal with a blank screen, or some kind of error message? Sorry for the rambling... there's just lots of criteria that have to be met for me to think about upgrading the stereo. Is it any harder to do a self install on these cars? Or am i unjustly nervous about digging into my new baby?

there are many wiring harness avaliable for the gen2s, shop around you will find one. the MID is near useless once the OEM stereo is removed, you get a clock, outside temp... and it says hello and bye to you, but no error messages.
also its easy to do a head unit install in the 2012s, once the old one is it you have tons of room to get at wires, and a steering wheel button control box (you might not want or need that, but you will lose OEM controls with an after market HU FYI)
plenty of us have done this install so if you have questions in sure we can answer them.
but all in all is you have done some installs in the past, it will be easy for you.

Aside from my old Corolla, this was the easiest car to pull the head unit from.
No error messages on the dash display... Just time, temperature and hello/goodbye.
I used the metra harness supplied with my head unit from crutchfield. No problems.

yep, Crutchfield or Sonicelectronix are great places to start for things like wiring harnesses, dash kits, radio antenna adaptors, etc.

Ok thanks for the responses guys! One last question... will doing the install myself void my warranty in any way? I dont want to f**k myself over just to upgrade the stereo.

No you will not void your warranty. Unhook your battery before hand.... But that should be a given.
